All of a sudden I got curious about them, so I ask:
1. Who here has made some? What’s your recipe?
2. I would like to have a crunchy-cookie crust. How?
3. If I am a tourist and I am crave good chocolate pie, what shop has the best chocolate pie?

That’s going to be a question best answered by someone local to you. Costco makes good pastries and desserts, but otherwise the local bakeries are always the best.

This is pretty close to my recipe. I use a bit of booze instead of just water when making the crust, it makes it flakier and then some of the proportions are slightly different, but not drastically so.
The crust on this, since it has the flakiness and the pecans in it, tastes very much like a shortbread cookie. I actually modify this crust and use it for other pies, using things other than pecans in it for flavor.

Cookie crusts are easy. Get some graham crackers and crush them up. Then mix in some melted butter (the real stuff, bub, not that Country Crock shit). Use your hands or the flat bottom of a measuring cup to press the graham cracker crumbs/butter combo into the bottom of a pie pan. Use your fingers to press the mixture up the shallow sides of the pan.
You can do the same thing with pretty much any hard cookie, like Oreos.
Voila!
As for the filling...
I was watching Martha Stewart Bakes a couple of weekends ago and she had a pretty simple chocolate ganache filling recipe. You should be able to find it on PBS’ website.

As you appear to be a pie wizard, I should ask you something. I’ve been thinking for a while of making a variant strawberry rhubarb pie with kiwis as well - this would normally involve a “normal” flakey crust, but I kind of wonder if I should tamper with the formula for crust as well. Graham cracker, or something else?
It’s worth note that other crust options would likely make it a better cold pie than a hot pie, but I’m fine with that - the succulence and small bite of the kiwi wouldn’t hurt that at all.

Oh man. I’ve only had strawberry rhubarb pie exactly once. It was delicious!
And I’m not a pie wizard, that would be my sister. I’m the cookie wizard. ^_^ And gourmet cupcakes. (Seriously, one of my faves was a chocolate orange cupcake I made filled with chocolate ganache and topped with orange buttercream frosting. Soooooo decadent!)
I think a crumbly crust would make it more like a tart than a pie, especially if there’s no top crust, no?
But I don’t know how well graham crackers would mesh with the tart acidity of strawberries and kiwis. Maybe you could use shortbread cookies instead? Or some other similarly mild type of hard sugar cookie?

I was thinking that tart acidity would have some of the same rules apply as a key lime, which uses graham cracker (usually). That being said, sugar cookies might rock that combination, and would make an interesting dark red pie/ white cream and white crust color combo.

You can make them like a graham crust but do it with Oreos instead of graham crackers. I prefer an actual pie crust though. Also, don’t get instant pudding, use the real stuff.

If you’re ever in Madison, WI there’s this bakery called Humble that’s pretty much all pies all the time and amazing.
